How to make the perfect Mai Tai

Mai Tai: the Tahitian temptress. A cocktail invented to flaunt white and dark rum in all their glory. Add orange curaçao, orgeat syrup and lime juice to the mix to elevate it that little bit further. Made in the wrong hands and it will end in misery (and a banging head)! ‘Mai Tai’ supposedly means ‘the best - out of this world’ when translated, and when it’s made properly we completely agree!

Ingredients:

  • 30ml of your preferred white rum
  • 30ml of your preferred dark rum
  • 30ml of your preferred orange curaçao
  • 50ml of fresh lime juice
  • 10ml of Orgeat syrup
  • 10ml of Grenadine syrup
  • A slice of pineapple
  • Lime peel
  • Ice

Method:

  • Put all the ingredients except the dark rum into your cocktail shaker along with the ice.
  • Shake for 8 – 10 seconds.
  • Add some ice to your tall tumbler or Poco Grande glass.
  • Strain the liquid into the glass,
  • Float the dark rum on top.
  • Garnish with a pineapple slice and a twist of lime peel.
