Once deemed too pretty to be delicious – the Clover Club is a pre-prohibition cocktail that has stood its ground and is here to stay. The marriage of sweet raspberries, zingy gin and luscious egg white has a unique way of seducing the taste buds.  Fruity, light, well-balanced, easy- drinking: what’s not to love! 

What you’ll need:

 

·      Your Rusty Barrel cocktail shaker set

·      50 ml of your preferred gin

·      15ml  of dry vermouth

·      15ml of Grenadine

·      15ml of pineapple juice

·      25ml of lemon juice

·      A dash of Aquafaba

·      Ice

Shake

Garnish:

Pineapple leaf and edible flowers

Top tip:

Double shake the cocktail to achieve a perfect frothy head. Shake once without ice, then add ice and shake again!

How to mix it like a pro:

 

1.     Add gin, dry vermouth, grenadine, pineapple juice, lemon juice, Aquafaba and ice to your shaker.

2.     Shake for around 8-10 seconds.

3.     Strain your drink into the glass.

4.     Add pineapple leaf and edible flowers to finish.

Roses are red, violets are blue, gin is awesome and cocktails are too…

Feeling creative?

Substitute Aquafaba for egg white. Aquafaba (chickpea juice) is used as a protein in place of egg white. Protein in a cocktail adds viscosity and delivers a smooth and creamy texture.
